Sweet potato cookies

These are the bomb!

Why because they are sugar free, sweetener free and ridiculously healthy. BINGO

Ingredients:

1 cup steamed and pureed sweet potato

2 cups of almond meal

1 tbsp coconut oil

1 tsp gluten free baking powder

1 tsp vanilla powder

Method:

Pre heat oven to 180 degrees

Steam potato, drain well and then mash / puree

In mixing bowl combine all dry ingredients and when the potato is cool, add it too

Make into balls and then flatten on lined tray

Bake for 25 minutes
